  4. Make ready 2 cups diced ham or 2 to 3 ham hocks
  5. Take 1 small yellow onion diced
  6. Prepare 2 carrots peeled and diced
  7. Take 2 stalks celery peeled and diced
  8. Get 1 Tbsp. garlic minced
  9. Prepare 1/4 cup butter
  10. Get 2 tsp. dried basil
  11. Get 1/2 tsp. black pepper
  12. Take 1 tsp. dried thyme
  13. Take 1 bay leaf
  14. Take 4 cups water
  15. Make ready 4 cups low sodium chicken broth
  16. Make ready 1 (14.5 oz) can Italian flavored diced tomatoes or use petite >
  17. Take tomatoes with 1 tsp. Italian seasonings mixed in
  18. Prepare 1 tsp. salt
  19. Make ready 3 cups chopped kale
  20. Take 1/2 lemon juiced
  21. Take 2 tsp. hot sauce

  23. Take Shredded Parmesan cheese

In a colander rinse and inspect beans thoroughly. Pour beans into slow cooker with liquid, onion, meat, garlic, and chili powder. When serving a crowd, we put this chili on in the morning and then prepare a chili bar with toppings so our guests can help themselves! Transfer ham hock to a cutting board, remove meat from bone, and return meat to slow cooker.

  1. Place the beans in a colander and sort out any debris, rinse beans and either add to slow cooker or to a pot and cover with water and add 1 teaspoon baking soda and let it sit overnight it's optional but i prefer it.

  5. After 8 hours remove bay leaf and shred ham hocks if used and discard bone and add in tomatoes, hot sauce, kale, salt, lemon juice and pasta if adding. Stir up and cover and cook for 20 more minutes and then stir in flavor packet that was in with the beans. Serve and top with some Parmesan cheese if desired. It's also great with buttered cornbread on the side. Enjoy !
