In a large bowl, toss the sweet potatoes and poblanos with some of the olive oil and a generous pinch of the kosher salt. Cut the sweet potato into ¼-½ inch dice and finely chop the green onions (green + light green parts). Heat the oil in a skillet over medium-high heat. Once the oil is shimmering, add the sweet potato.

Heat the oil in a skillet over medium-high heat. Once the oil is shimmering, add the sweet potato. Once potatoes are done, pour onto a plate and set aside.
